Just compare pictures of crowded public areas 40 years ago with what you see today. Does that reality match with the hypothesis of this article?

Why is seed oil the active ingredient in 40 years of change? Why not choose any other variable instead?

I don't suppose there's a correlation between when the manufactures started to increase the fructose component in regular corn syrup to make HFCS ...

Once again there's a correlation with hundreds, if not thousands, of dietary, environmental and lifestyle changes in the people affected. That holds true in countries that don't routinely use HFCS too.
The magic ingredients, the common factors... are eating too much and moving around too little. Does modern junk food make it easier to overeat without realizing it, or to compulsively overeat? Of course! Does that mean that there's some secret toxin making you fat?
No.

I was actually giving an example of the many things that have changed in the US since the 70s but higher fructose does actually play a part, not that the powerful food industry wants anyone to know half of the little tricks to make food more enticing.
There is little doubt ... very large emphasis on ... eating better / healthier, exercise and good sleep are all part of staying healthy and at a good weight.
Fructose does though make a difference to the digestive systems normal function. I would post the study from a few years ago by a leading US university that basically reaffirmed a study that was published in New Scientist in the late 90s; but there have been many studies / papers published since then that ... well sounds more like folks from the powerful food industry have been busy, but it sure thins out the more useful studies.
However a good example is myself. Recently I switched back from a glucose based sugar to sucrose with is 50:50 fructose glucose when it breaks down in the body. End of 24 I had been 81 kg, about right for my frame but not much fat. I have a dehydration related medical issue ... it turns out the more fat means the body can store a bit more water for times when I don't absorb water from the gut. I was 86 - 87 kg for 2025 ... starting February 2026 this year I switched back to sucrose though laziness mostly (it's also wet season so didn't want to open a large bag of dextrose) ... I'm about doing the same each day, I am eating less [1] but also not doing as much ... my weight sky rocketed to 97 - 98 kg presently. Not all people might be the same. I could also give the long example of how I someone back in the 90s who had taken to cycling to the nearest town 30 miles away - after reading a study, dropped sucrose and used glucose and a sweetener and lost a bit over 25 kg, a lot more than I wanted, not in the expected 14 months but closer to 3 months - I stopped because the bones of my arse hurt sitting on a hard chair and didn't want to carry a cushion around.
[1] Basic quick oats serve with tablespoon of sugar for breakfast, a couple cups of coffee, 3 teaspons of sugar each, a couple light meals though the rest of day, presently a couple chiko rolls and maybe a soup.

I can relate - I have a full boar nut case bro who about 4 - 5 years ago started to hone in what he would eat and this of course spilled over into what he objected to my parents eating. While freaking out about seeds or any oils derived from them, he'll instead use thick slices of butter on whatever he eats. Not bread though :) Funny thing is he has supposedly has a pancreatic issue - oh how he argues with my father when he gets out old medical books that state eating excess fat like butter isn't good for his supposed condition. I say supposed because I don't trust anything that leaves his lips ... and he's always got something worse in about the same place when someone has had themselves a very nasty injury.
